Pastry Commis I – Hotel Kitchen

About the role

The Commis I – Pastry supports the pastry team at The Meydan Hotel, preparing and presenting high‑quality baked goods, desserts and pastry creations for all hotel outlets, banquets and events. This entry‑level position ensures consistency, visual appeal and strict adherence to hygiene standards in a fast‑paced luxury environment.

Key responsibilities

• Prepare and assemble pastries, cakes, breads, desserts and doughs following standard recipes and presentation guidelines.
• Assist the Chef de Partie with daily kitchen operations, ensuring timely mise en place for restaurants, afternoon teas and large‑scale banquets.
• Maintain accurate inventory, support stock rotation (FIFO), report shortages and help minimise food waste.
• Follow HACCP and local food‑safety regulations, keeping workstations, equipment and cold storage areas clean and compliant.
• Collaborate with kitchen and service teams to deliver orders promptly, participate in seasonal menu testing and support peak‑volume periods.

Required profile

• Diploma or culinary certification in Pastry Arts, Baking or Hospitality Management, or equivalent experience.
• Solid knowledge of classic and modern pastry techniques, chocolate work and dessert plating.
• Experience in high‑volume production, dough preparation and cake decoration with consistent quality.
• Strong organisational skills, attention to detail and ability to multitask under pressure.
• Flexibility for shift work, early mornings, weekends and holidays.
