Restaurant Outlet Manager – Pre‑Opening

About the role

Fundamental Hospitality is preparing to launch La Maison Ani, a French‑inspired restaurant at Mall of the Emirates. As the Outlet Manager you will lead the pre‑opening team, ensuring the venue is fully ready for a successful launch and then drive day‑to‑day operations.

Key responsibilities

• Lead the pre‑opening process, making sure the outlet is operationally ready for launch.
• Recruit, onboard, train and develop the opening team.
• Implement and uphold La Maison Ani’s service, operational and brand standards.
• Oversee daily restaurant operations, ensuring efficiency, consistency and high‑quality execution.
• Maintain a visible leadership presence on the floor, inspiring both staff and guests.
• Deliver outstanding guest experiences by anticipating needs and resolving concerns.
• Drive team performance through coaching, feedback and performance management.
• Manage staffing levels, scheduling and productivity in line with business needs.
• Monitor financial and operational performance, including revenue, costs, budgets and KPIs.
• Implement cost‑control measures while preserving service standards.

• Strong focus on operational excellence and guest satisfaction.
• Excellent organizational and multitasking skills to manage recruitment, training and daily operations.
