Stewarding Manager

About the role

We are seeking a proactive Stewarding Manager to lead the stewarding department at our Sofitel hotel in Dubai. The role involves overseeing daily cleaning operations, ensuring hygiene standards, and supporting the culinary and banquet teams.

Key responsibilities

• Manage daily operations of the stewarding department, including scheduling, training and performance evaluation of staff.
• Ensure all kitchen utensils, cookware, crockery, cutlery and equipment are cleaned and sanitized according to hotel standards.
• Maintain cleanliness in kitchens, storage areas, dishwashing stations and waste disposal zones.
• Monitor inventory of cleaning chemicals, equipment and supplies while controlling labor costs within budget.
• Guarantee compliance with food safety, hygiene and occupational health and safety regulations.
• Coordinate with the Executive Chef and F&B team to support restaurant and banquet services.
• Oversee waste management, recycling procedures and preventive maintenance for kitchen equipment.
• Conduct regular inspections, implement corrective actions and enforce standard operating procedures.

Required profile

• 1–2 years of experience in a stewarding or similar role within a hotel or large food service operation.
• Strong leadership, team‑management and communication abilities.
• Proven problem‑solving skills and ability to work under pressure.
• Good knowledge of HACCP, food safety, sanitation and hygiene standards.
