Sushi Chef De Partie

About the role

We are seeking a skilled Sushi Chef De Partie to join the Japanese dining team at InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa. You will be responsible for preparing high‑quality sushi and related Japanese dishes, ensuring every plate meets our luxury standards.

Key responsibilities

• Prepare sushi, sashimi, nigiri, maki and other Japanese menu items following established recipes.
• Maintain consistency in taste, presentation, portion sizes and overall food quality.
• Support daily mise en place, food preparation, production and service within the sushi section.
• Assist in seasonal menu development and creation of signature dishes.
• Uphold strict HACCP, food safety, hygiene and sanitation standards.
• Monitor stock levels, manage proper storage, rotate stock and minimise waste.
• Train and develop junior kitchen staff in sushi techniques.
• Ensure kitchen equipment and work areas are clean and well‑maintained.

Required profile

• Proven experience as a Sushi Chef de Partie or similar role in a hotel or resort environment.
• Strong knowledge of Japanese cuisine and techniques.
• Commitment to food safety, quality and guest satisfaction.
• Ability to work efficiently in a fast‑paced, luxury kitchen.
