Commis I – Kitchen Assistant (French Cuisine)

About the role

One&Only The Palm is seeking a Commis I to join its French cuisine kitchen team. You will support senior chefs in preparing high‑quality dishes, maintaining hygiene standards, and delivering an exceptional dining experience for guests.

Key responsibilities

• Assist in the preparation, cooking, and presentation of authentic French dishes following resort recipes and guidelines.
• Prepare mise‑en‑place and ensure all ingredients are organized and ready before service.
• Support senior chefs in daily operations of the French cuisine section, including portion control and quality checks.
• Inspect ingredients for freshness, follow proper storage, labeling, and FIFO stock rotation.
• Maintain high standards of hygiene, cleanliness, and food safety in line with HACCP requirements.
• Minimize food waste and ensure efficient use of ingredients.
• Clean and maintain kitchen equipment, reporting any faults promptly.
• Assist with receiving, storing, and monitoring stock levels for the French kitchen.
• Collaborate with other kitchen sections to ensure seamless service.
• Participate in kitchen briefings, training sessions, and team meetings.
• Support banquet functions, special events, and high‑volume operations as needed.
