Stewarding Team Leader

About the role

We are seeking an experienced Stewarding Team Leader to manage the daily operations of the Stewarding Department at our upscale hotel in Dubai. Reporting to the Chief Steward, you will ensure the highest standards of cleanliness, hygiene, and safety across all kitchen and back‑of‑house areas.

Key responsibilities

• Supervise and coordinate daily stewarding activities, including dishwashing, glassware, and equipment cleaning.
• Monitor waste disposal and ensure compliance with environmental and hygiene standards.
• Oversee opening and closing procedures for all stewarding zones.
• Manage equipment handling, maintenance, and inventory records.
• Control usage of cleaning chemicals and supplies to minimise waste.
• Enforce HACCP, food safety regulations, and local UAE legislation.
• Collaborate with the Hygiene Officer to uphold sanitation procedures.
• Conduct safety briefings and maintain ISO Integrated Management System compliance.
• Provide hands‑on coaching, training, and performance feedback to team members.

Required profile

• Proven experience in stewarding or back‑of‑house operations within a hotel or large‑scale food service environment.
• Strong knowledge of hygiene, safety, and quality standards.
• Ability to lead, motivate and develop a diverse team.
• Excellent organisational and communication skills.
