Assistant Manager - Japanese Restaurant

About the role

Fairmont Bab Al Bahr, a five-star beachfront luxury hotel in Abu Dhabi, is looking for an Assistant Manager for its Japanese restaurant. The role covers day-to-day restaurant operations, staff supervision, guest service and compliance with food safety and hygiene standards.

Key responsibilities

• Assist in managing day-to-day restaurant operations, including smooth opening and closing procedures.
• Monitor service quality, ensure Japanese dining standards, presentation and hospitality are followed, and handle guest concerns and complaints professionally.
• Supervise, motivate and support staff during shifts, conduct daily briefings, prepare schedules and manage shift coverage.
• Assist with recruitment, onboarding and training of new employees, and coach staff on performance.
• Build positive guest relationships, respond to feedback and implement service improvements.
• Ensure compliance with food safety, hygiene, sanitation, HACCP and local health and safety regulations, and monitor food quality, portion control and cleanliness.
• Manage inventory levels, conduct stock counts, minimise food waste and help prevent inventory loss.
• Support cost control by monitoring operating and labour costs, assist with daily cash handling and reconciliation, and help achieve sales targets.
• Prepare operational reports and promote workplace safety.

Required profile

• Bachelor's degree or diploma in Hospitality Management, Business Administration or a related field preferred.
• Minimum of 2-3 years of supervisory or assistant management experience in a restaurant, preferably Japanese or Asian.
• Strong leadership, team management, customer service and communication skills.
• Knowledge of Japanese cuisine, dining etiquette and restaurant operations is an advantage.
• Ability to work flexible hours, including evenings, weekends and public holidays.

Required skills

• Familiarity with POS systems and Microsoft Office applications.
