Assistant Sommelier

About the role

Kerzner International is hiring an Assistant Sommelier to join the Food & Beverage team at One&Only The Palm Resort in Dubai. The role supports the resort's wine program by helping with wine service, guiding guests on selections and keeping the wine cellar and inventory in order, while contributing to daily restaurant operations.

Key responsibilities

• Assist in recommending and serving wines according to guest preferences, and present, open and pour wine to professional standards.
• Help guests pair wine with menu items and give accurate information on regions, varietals, vintages and flavour profiles.
• Support the Head Sommelier in maintaining and updating the wine list, and promote premium wines, special vintages and wine-by-the-glass options.
• Receive, organise and store wine bottles correctly, with proper labelling, FIFO rotation and handling.
• Carry out stock-taking, keep accurate inventory records and report low stock or discrepancies.
• Work with the service team, train servers on basic wine knowledge and etiquette, and support restaurant operations during peak times.
• Assist with wine-pairing dinners, tastings and special events, and take part in supplier or internal wine education sessions.

Required profile

• Minimum 2 years of experience in an upscale 5-star hotel or resort setting.
• Experience working in a Michelin-starred restaurant and strong wine knowledge.
• Excellent spoken and written English; additional European languages are highly regarded.
• Strong management and interpersonal skills, able to build relationships with high-profile, diverse clients.
