Back of House (BOH) Lead – Kitchen Operations

About the role

We are opening new NALA stores in Dubai and need an experienced Back of House (BOH) Lead to own the kitchen operation each shift. The role ensures the kitchen, pass and food safety standards are consistently met, supporting flawless service for our guests.

Key responsibilities

• Lead the BOH team on every shift, approving station readiness before opening.
• Check fridge hierarchy, three‑sink setup and equipment condition prior to service.
• Maintain clean, organized kitchen, pass and prep areas throughout service.
• Enforce food build specifications, conduct morning tasting sheets and monitor quality, temperature and presentation.
• Manage cold‑chain and food‑safety compliance, escalating any deviations immediately.
• Ensure production areas are stocked and prepared for peak periods.
• Cross‑train team members across Front and Back of House to build flexibility.

Required profile

• Proven experience in a kitchen leadership or BOH supervisory role.
• Strong attention to detail and ability to maintain high standards under pressure.
• Excellent communication and calm decision‑making skills.
• Commitment to food safety and hygiene regulations.

Required skills

• Knowledge of kitchen equipment, station setup and cold‑chain management.
• Understanding of food safety standards and quality control processes.
