Chef de Partie – Pastry

About the role

The Chef de Partie – Pastry will support the Pastry Chef in delivering high‑quality pastries, desserts, breads and confectionery for a 5‑star hotel in Dubai. This role ensures consistency, hygiene and presentation standards across all pastry outlets, including restaurants, room service and banquets.

Key responsibilities

• Prepare and produce pastries, cakes, breads, chocolates and other bakery items following standard recipes and portion controls.
• Maintain the assigned pastry section, ensuring smooth daily operations and proper mise en place.
• Uphold food safety, hygiene and HACCP procedures, including proper storage, labeling and rotation of ingredients.
• Monitor stock levels, report shortages or wastage, and assist with cost control.
• Support buffet displays, banquets, restaurant service, room service and special events as required.
• Assist the Pastry Chef in training and supervising Commis Chefs and kitchen trainees.

Required profile

• Diploma or certification in Culinary Arts, Pastry or Bakery.
• 2–3 years of pastry experience in a 5‑star hotel or luxury hospitality environment.
• Strong knowledge of pastry techniques, baking methods, chocolate work, desserts and cake decoration.
• Good understanding of HACCP and food‑safety standards.
• Ability to work under pressure in a fast‑paced kitchen.
• Attention to detail, creativity and a commitment to quality.
• Effective communication and teamwork skills.
