Commis 1 & 2 – Kitchen Assistant

About the role

The Commis 1 & 2 will support the Chef de Partie in daily kitchen operations at Fairmont The Palm, a luxury resort in Dubai. Working in a fast‑paced, five‑star environment, you will help prepare mise‑en‑place, manage stock, and ensure high standards of hygiene and service.

Key responsibilities

• Assist the Chef de Partie with mise‑en‑place production and service throughout the shift.
• Execute orders received from the Chef de Partie accurately and timely.
• Complete daily checklists for food storage and hygiene, maintaining HACCP records.
• Prepare and submit wine, dry store, and food requisitions for approval.
• Monitor stock rotation and perform kitchen transfers as required.
• Report equipment issues and follow up on repairs.
• Communicate shift hand‑over information and attend daily briefings.
• Support banquet and special function setups as directed.

Required profile

• Completed a kitchen apprenticeship or chef training course (minimum one year).
• 1–2 years experience in a five‑star international hotel or resort.
• Ability to read and follow recipes accurately.
• Good communication skills and ability to work well with colleagues.

• Basic cooking techniques and food preparation.
