Commis I - Pan Asian Cuisine

About the role

A full-time Commis I position in the Pan Asian kitchen at an Accor hotel in Dubai. The role covers the live station, high-volume buffet and fine dining, with knowledge of East Asian and Southeast Asian cuisine, while keeping high standards of food quality, hygiene and presentation.

Key responsibilities

• Master high-heat wok stations: stir-fries, deep frying, braising and sauce emulsification under continuous heat.
• Oversee sushi and raw bar: raw fish handling, knife technique, rice seasoning and strict raw protein sanitation.
• Produce long-simmered broths and steamed or fried dim sum.
• Formulate Thai curry pastes, satay, marinades, dipping sauces and glazes.
• Maintain consistency in taste, quality, portion control and presentation.
• Prepare and replenish food on time during cafeteria service.
• Follow food safety, hygiene and HACCP standards and proper food storage.
• Monitor stock rotation, minimise waste and keep the kitchen clean and organised.
• Work closely with the kitchen team to deliver an efficient, high-quality dining experience.

Required profile

• Culinary degree or professional culinary certification preferred.
• Proven experience as a Commis I or similar in a 4-star or 5-star hotel, resort or large-scale catering operation.
• Good knowledge of Pan Asian cuisine.
• Ability to follow standardized recipes, maintain food quality and work efficiently in a multicultural kitchen team.
• An additional language is an advantage.
