Demi Chef de Partie – Italian Restaurant (Chitarra)

About the role

Mandarin Oriental Downtown is seeking a Demi Chef de Partie to join the Chitarra Italian restaurant team. You will assist in preparing classic and contemporary Italian dishes while upholding the hotel’s high culinary standards.

Key responsibilities

• Assist the Chef de Partie in preparing fresh pasta, risottos, grilled specialties and antipasti.
• Maintain a clean, safe and well‑organized kitchen environment.
• Monitor inventory levels and help place orders for your section.
• Provide cross‑functional support across kitchen operations when required.
• Ensure compliance with HACCP, health, food safety and UAE municipality regulations.

Required profile

• High school diploma or equivalent; formal culinary training is an advantage.
• Minimum 2 years experience as a Demi Chef de Partie in a 5‑star hotel or reputable Italian restaurant.
• Strong foundation in Italian culinary techniques, including pasta‑making and wood‑fired oven cooking.
• Effective communication skills in English; additional languages are a plus.
