Demi Chef de Partie – Kitchen Operations

About the role

The Demi Chef de Partie supports the kitchen team in delivering high‑quality dishes at AccorHotel’s Dubai property. Working under the Chef de Partie or Senior Chef, you will help plan, prepare, and present meals while ensuring smooth daily operations.

Key responsibilities

• Plan and organise daily food production, purchasing and manpower using forecasts and reports.
• Supervise and motivate kitchen staff, conduct briefings and ensure tasks are completed on time.
• Prepare, season, and present menu items, stocks, sauces and specials according to hotel standards.
• Expedite the food pass for à la carte service and manage mise en place for the next shift.
• Maintain hygiene, follow HACCP and FIFO procedures, and keep work areas clean and organized.
• Perform administrative duties such as staff sign‑in verification, scheduling and documentation.

Required profile

• Ability to work independently and take responsibility for a station in the absence of senior chefs.
• Strong attention to food safety, sanitation and compliance with HACCP and local regulations.
• Flexibility to adapt to changing business demands and work varied shifts.
• Good communication skills to liaise between senior chefs and line staff.

Required skills

• Butchering and portioning of seafood, meat and poultry.
• Preparation of stocks, sauces and other base components.
• Knowledge of menu creation, recipe costing and portion control.
• Application of HACCP food safety standards.
• Use of FIFO inventory management and proper labeling.
