Director of Restaurants, Bars & Experiences

About the role

Emirates Palace Mandarin Oriental, Abu Dhabi is looking for a Director of Restaurants, Bars & Experiences to lead its Restaurants, Bars & Experiences Division. The Director positions the division as a strategic driver of hotel performance, creating distinctive concepts and destination venues, and is accountable for long-term growth, revenue, guest loyalty and profitability.

Key responsibilities

• Lead all restaurants, bars, banqueting events and experiences, executing the division's strategy and ensuring each outlet has a clear concept, target guest and positioning
• Build and develop a high-performing team, define roles and recruitment strategy, and set up training and continuous improvement
• Own commercial performance: lead budgeting, forecasting and business planning, and drive revenue, profitability and banqueting results
• Control costs through labour and food cost optimisation, menu engineering and demand planning
• Deliver memorable guest experiences, raise product and service standards, monitor guest feedback and ensure compliance with hygiene, safety and HACCP standards
• Position outlets as destination venues, work with Sales & Marketing on promotions and partnerships, and use social media and other channels
• Adopt operational and reporting systems, maintain oversight of cost control and inventory, and track performance at outlet level

Required profile

• Bachelor's degree in Hospitality Management or a relevant field
• Senior leadership experience in luxury F&B operations
• Experience managing multi-outlet operations including restaurants, bars, banqueting, room service, culinary and stewarding
• Strong operational, commercial and financial management skills, and experience driving marketing and public relations in food and beverage
• Excellent leadership, communication and people management skills
