Executive Sous Chef (5‑Star Resort)

About the role

We are looking for an Executive Sous Chef to join Mövenpick Resort Al Marjan Island in Ras Al Khaimah. Reporting to the Executive Chef, you will help lead the culinary team in delivering high‑quality dining experiences across all outlets of this 5‑star resort.

Key responsibilities

• Support the Executive Chef in daily kitchen and stewarding operations, ensuring smooth service for banquets, all‑day dining and special events.
• Monitor food costs, operating expenses, payroll and departmental budgets; ensure menus are accurately costed and standardized.
• Maintain full compliance with HACCP standards and local health and safety regulations.
• Recruit, train, coach and develop kitchen and stewarding staff, leading briefings, performance evaluations and training initiatives.
• Collaborate with Food & Beverage Operations on seasonal promotions, menu development and guest feedback implementation.
• Oversee food quality, stock control, purchasing, proper storage and equipment maintenance.

Required profile

• Proven senior culinary leadership experience, preferably as Executive Sous Chef or Sous Chef in a 5‑star resort in the UAE/GCC.
• Strong knowledge of food cost control, budgeting and high‑volume kitchen operations.
• Excellent leadership, communication and team development abilities.
• Thorough understanding of HACCP, food safety, health and hygiene regulations.
• Passion for guest service and culinary excellence.
