Executive Sous Chef with native Arabic & Mediterranean cuisine expertise

About the role

The Executive Sous Chef will support the Executive Chef in creating authentic Arabic and Mediterranean menus while leading a diverse kitchen brigade. This position ensures high‑quality dishes, strict cost control, and compliance with hygiene and safety standards across all food outlets.

Key responsibilities

• Contribute to the development of Arabic and Mediterranean menu concepts.
• Train, motivate and schedule the kitchen team to maintain consistency and efficiency.
• Assist the Executive Chef with guest relations and represent the kitchen in leadership meetings when required.
• Monitor food cost, manage inventory and support revenue targets.
• Ensure all operations meet Hilton brand standards, health‑and‑safety regulations and food‑hygiene policies.

Required profile

• Extensive experience as a Sous Chef or Executive Sous Chef in hotel or resort environments.
• Native knowledge of Arabic and Mediterranean cuisines.
• Strong supervisory and communication skills with a positive, team‑oriented attitude.
• Ability to work flexible shifts, including weekends and evenings.
