Fish Monger – 5‑Star Luxury Hotel (Ras Al Khaimah)

About the role

Apt Resources is seeking an experienced Fish Monger to join a prestigious 5‑star luxury hotel serving the Red Sea region. The successful candidate will handle the full range of seafood preparation, ensuring the highest standards of quality, hygiene, and food safety for premium dining experiences.

Key responsibilities

• Receive, inspect, and verify the freshness and quality of all seafood deliveries.
• Clean, scale, gut, fillet, skin, debone, and portion a variety of fish and seafood according to kitchen specifications.
• Store, label, and rotate seafood using FIFO procedures.
• Maintain cleanliness and sanitation of the fish preparation area, tools, and equipment.
• Follow HACCP, food safety, and hygiene standards at all times.
• Collaborate with chefs to prepare seafood for menu items.
• Minimize waste through proper handling and portion control.
• Monitor inventory, assist with stock control and ordering.
• Maintain cutting tools and equipment in safe working condition.

Required profile

• Minimum 3 years of experience as a Fish Monger, Seafood Butcher, or Fish Cutter in a 5‑star hotel, luxury resort, or high‑end seafood establishment.
• Strong knowledge of seafood species, handling, storage, and preparation techniques.
• Excellent knife skills, including filleting, deboning, and portioning.
• Good understanding of HACCP, food safety, and hygiene regulations.
• Ability to work efficiently in a fast‑paced kitchen environment.
• Attention to detail and commitment to high‑quality standards.
• Teamwork and communication skills.
• Flexibility to work various shifts, including weekends and holidays.
• Must be currently residing in the UAE.
