Junior Sous Chef

About the role

SLS Dubai, a luxury 5-star city hotel belonging to Ennismore under the Accor group, is hiring a Junior Sous Chef in its kitchen department. The role supports the Sous Chef or Chef de Cuisine in maintaining culinary standards, running the kitchen smoothly and ensuring high guest satisfaction.

Key responsibilities

• Assist the Sous Chef or Chef de Cuisine in setting and maintaining culinary standards, including banquet standards tailored to the target market.
• Optimize the use of materials and manpower to maximize revenue and guest satisfaction.
• Coordinate and deliver training to kitchen colleagues, motivate them and help supervise all kitchen staff.
• Cook daily according to business requirements and attend daily and monthly meetings with the Executive Chef / Executive Sous-Chef, reporting on menu planning, recipes, samples, product specifications and inventory checks.
• Use local and seasonal products where possible, and write accurate product specifications and standard recipes for the computer and the Materials Manager.
• Inspect fresh food daily and stores and refrigerated areas twice daily, suggesting correct storage methods to comply with Health & Safety regulations.
• During service, personally run the hot plate and ensure food presentation and quality meet established standards.

Required profile

• 3 years of experience as Chef de Partie or a similar position.
• Strong verbal, listening and written communication skills, with fluency in English; additional languages are a plus.
• Innovative, proactive and reliable, able to work under pressure in a multicultural environment.
• Cost awareness, leadership and team-building abilities, and creative approach to food quality and presentation.

Required skills

• Basic Food and Hygiene training certification.
• Managerial and computer skills.
• Knowledge of product specification.
