Junior Sous Chef - Pastry

About the role

Rixos Al-Mairid, part of Accor, is hiring a Junior Sous Chef Pastry in Ras Al Khaimah. The role supports the kitchen team in preparing mise en place for all F&B outlets, supervising Demi Chefs and Commis Chefs, and helping the Chef de Cuisine with recipes and menus.

Key responsibilities

• Supervise, coordinate and take part in the preparation of mise en place for all F&B outlets, checking Demi Chefs and Commis Chefs on matters such as personal hygiene.
• Control freshness, preparation techniques and storage of goods, and order and turnover of products through daily inventory lists.
• Assist the Chef de Cuisine in composing new recipes and menu ideas.
• Check cooking procedures, portioning, garnishing and presentation of dishes, and prepare staff meals.
• Set up work rosters for the section and allocate tasks according to the mise en place list.
• Take orders from the Sous-Chef, ensure food is prepared efficiently and within a reasonable time, and that hot dishes leave the kitchen at the correct temperature.
• Work to the Sous-Chef's specifications on portion size, quantity and quality, and taste food during preparation.
• Maintain high standards of guest care, personal hygiene and grooming, and wear the uniform well pressed and in good condition.
• Handle guest complaints promptly and report unresolved incidents to the Sous-Chef or Chef de Cuisine.
• Follow health and safety duties, including fire prevention and the restaurant evacuation plan, and stay alert to guest, staff and property welfare.
• Familiarise yourself with the Rixos Al-Mairid performance and product standards and answer guest questions quickly and politely.

Required profile

• Culinary diploma or equivalent.
• Minimum 2-3 years' experience in a similar or supervisory kitchen (pastry) role within the hospitality industry.
• Leadership and time management skills.
