Restaurant Captain – Food & Beverage

About the role

We are seeking an experienced Restaurant Captain to join the Food & Beverage team at Emirates Palace Mandarin Oriental in Abu Dhabi. The Captain will oversee a designated section of the restaurant, ensuring seamless service, high standards, and memorable guest experiences.

Key responsibilities

• Coordinate and supervise opening and closing duties for the brigade.
• Assist the Assistant Restaurant Manager with planning based on reservations and special events.
• Inspect equipment, furniture, and overall cleanliness of the service area.
• Train waitstaff and junior team members on service standards.
• Set up the assigned restaurant section accurately and welcome guests at the station.
• Present menus and beverage lists, offering recommendations to increase average check.
• Take food and beverage orders, ensuring prompt delivery.
• Monitor billing, cash handling, and follow‑up procedures in line with hotel policies.
• Maintain presence on the floor during service, resetting tables promptly after guests depart.

Required profile

• Proven experience in a supervisory role within a luxury hotel or fine‑dining restaurant.
• Strong attention to detail and commitment to service excellence.
• Ability to work collaboratively with a diverse team and handle high‑pressure situations.
• Excellent communication skills and a customer‑focused mindset.

Required skills

• Knowledge of restaurant operating procedures and standards.
• Familiarity with cash handling and billing systems.
• Ability to train and mentor junior staff.
