Restaurant Manager – French Fine Dining

About the role

As the Restaurant Manager of Bord Eau, a French fine‑dining venue within Shangri‑La Qaryat Al Beri, you will lead daily operations to deliver an authentic French culinary experience. Reporting to the Food & Beverage Director, you will ensure the highest standards of service, guest satisfaction, and profitability.

Key responsibilities

• Oversee all front‑of‑house activities, guaranteeing seamless and personalized guest experiences.
• Supervise, train, and develop a team of servers, hosts, and support staff in line with luxury and Michelin‑level service standards.
• Handle guest feedback, anticipate needs, and resolve issues promptly to maintain exceptional satisfaction scores.
• Manage inventory, control costs, and support wine program initiatives, including pairing recommendations.
• Ensure compliance with food safety, hygiene, and all regulatory requirements.
• Collaborate with culinary and beverage teams to refine menus, wine lists, and overall dining concepts.

Required profile

• Fluent in French and English, both spoken and written.
• Minimum 3–5 years of restaurant operations experience, with at least 1–2 years in a fine‑dining or Michelin‑recognized establishment.
• Strong leadership, coaching, and team‑development abilities.
• Professional appearance, meticulous attention to detail, and a passion for hospitality excellence.
• Hospitality or hotel management diploma or bachelor’s degree preferred.

Required skills

• Advanced wine knowledge (minimum WSET Level 2) and ability to recommend and upsell pairings.
