Sous Chef – Chinese Cuisine

About the role

Wynn Al Marjan Island, the first integrated resort in the UAE scheduled to open in 2027, is seeking a Sous Chef specialized in Chinese cuisine. Reporting to the Executive Chef, you will lead the Chinese kitchen, ensuring authentic, high‑quality dishes across the resort’s multiple dining venues.

Key responsibilities

• Oversee daily operations of the Chinese kitchen, maintaining efficiency, consistency, and culinary standards.
• Monitor resource consumption, optimise equipment use, ingredient usage and inventory.
• Develop weekly set menus, monthly promotions and seasonal offerings in collaboration with the Executive Chef.
• Ensure all dishes are prepared and presented according to recipes, quality and presentation guidelines.
• Lead, coach and support kitchen staff to achieve high performance and teamwork.
• Maintain cleanliness and hygiene of the kitchen, equipment and utensils in compliance with HACCP, health and safety regulations.
• Address guest requests and feedback promptly to enhance the dining experience.
• Uphold and improve health and safety practices and perform additional duties as assigned.

Required profile

• Secondary school diploma or equivalent; culinary qualification preferred.
• Extensive experience (approximately 8 years) in Chinese cuisine, including cost control and pricing of ingredients.
• Strong leadership and supervisory abilities with a proven track record of motivating and mentoring kitchen teams.
• Excellent communication and interpersonal skills for effective interaction with staff and management.
• Strong organisational and time‑management capabilities.
