Sous Chef - French Cuisine Experience

About the role

Fairmont Bab Al Bahr, a 5-star beach resort in Abu Dhabi, is looking for a Sous Chef for its French Cuisine restaurant. The role supports the Executive Chef in managing and running the culinary team, with a focus on authentic and contemporary French cuisine, and ensures high standards of food quality, hygiene and guest satisfaction.

Key responsibilities

• Assist the Executive Chef in planning, organizing and supervising daily kitchen operations, and lead operations in their absence
• Prepare, cook and present French dishes to luxury hospitality standards, keeping quality, taste, portioning and presentation consistent
• Develop French-inspired menus, seasonal specialties and signature dishes, following approved recipes and hotel standards
• Supervise and train junior chefs and kitchen staff, and conduct regular coaching sessions
• Help schedule staff and ensure adequate manpower coverage
• Enforce HACCP, food safety regulations and hotel policies, and inspect kitchens for cleanliness and sanitation
• Monitor storage, handling and labeling of food, and support food cost management, inventory monitoring, purchasing and stocktaking
• Collaborate with Food & Beverage teams, respond to guest feedback and dietary requests, and support VIP functions, banquets and special events

Required profile

• Minimum 3-5 years of experience as Sous Chef or Senior Chef de Partie specializing in French cuisine in a luxury hotel or fine-dining setting
• Experience in upscale restaurants, luxury hotels or Michelin-standard establishments is highly desirable
• Certified in Food Safety and Hygiene; HACCP certification preferred
