Chef de Partie - Italian & Mediterranean Kitchen

About the role

Mandarin Oriental Jumeira, Dubai, is looking for a Chef de Partie to join its The Bay Kitchen team, which serves Italian and Mediterranean cuisine. The Chef de Partie takes full responsibility for the food quality and presentation of the restaurant's dishes and assists other parts of the culinary operation.

Key responsibilities

• Supervise the kitchen section and cooperate with the other sections
• Ensure food quality, plating and timely delivery meet standards, with up-to-date plating guides followed
• Order ingredients daily and oversee food safety standards, including HACCP, MOstay and UAE Municipality rules
• Follow grooming and appearance standards and respond to VIP and special dietary requests
• Control kitchen cleanliness and maintenance, attend shift briefings and monthly meetings, and share recipes and training with colleagues
• Support the Chef de Cuisine with training, audits, administration and the market list and inventory

Required profile

• High school qualification or equivalent; degree or higher national diploma in hospitality/culinary arts preferred
• At least 3 years' experience in a 5-star hotel or free-standing restaurant
• Experience as Chef de Partie in a high-volume Italian and Mediterranean restaurant preferred
• International work experience in at least two of Asia, Europe, North America and preferably the Middle East
• Ability to work long hours, lead a large team and handle multiple tasks

Required skills

• Solid knowledge of cooking methods, ingredients, equipment and HACCP
• Competent computer skills, including MS Office or equivalent
