Chef de Partie - NH Collection Dubai The Palm

About the role

NH Collection Dubai The Palm, part of Minor Hotels, is looking for a Chef de Partie. You will manage your assigned section of the kitchen and make sure every dish is prepared, cooked and presented to the hotel's quality, hygiene and brand standards, supporting the Sous Chef and Executive Chef in efficient kitchen operations.

Key responsibilities

• Prepare, cook and present dishes according to approved recipes, presentation standards and guest requirements.
• Take responsibility for the daily operation and organisation of the assigned kitchen section.
• Ensure consistent food quality, portion control, taste and presentation.
• Maintain high standards of food safety, hygiene, HACCP and kitchen cleanliness.
• Monitor mise-en-place and ensure adequate preparation for daily operations.
• Guide, train and support Demi Chefs and Commis Chefs within the section.
• Assist with stock control, proper food storage, FIFO procedures and minimising food waste.
• Use kitchen equipment safely and report maintenance issues promptly.
• Support the Sous Chef and senior culinary team during busy operations and special events, and work with other kitchen sections for smooth service.

Required profile

• Previous experience as a Chef de Partie or strong Demi Chef experience in a 4- or 5-star hotel or quality restaurant.
• Culinary qualification or relevant professional training preferred.
• Ability to work efficiently in a fast-paced kitchen and to work shifts, weekends and public holidays.
• Good communication and teamwork skills.
