Commis II – Kitchen Assistant

About the role
The Commis II will support the kitchen team at Swissotel Dubai, ensuring high‑quality food preparation and service in line with Accor standards.
Key responsibilities
- Prepare and plate food orders accurately and timely, following standardized recipes and plating specifications.
- Maintain a clean, organized work area, adhere to HACCP guidelines, and manage stock using FIFO principles.
- Assist senior chefs with mise en place, equipment operation, and daily requisitions.
- Support waste minimisation, food cost control, and environmental protocols.
Required profile
- High school diploma or culinary diploma from an accredited institution.
- Minimum 1 year experience as a commis or similar role in a fine‑dining or upscale hotel kitchen.
- Fluency in English; additional languages are a plus.
- Commitment to hygiene, safety, and hotel policies.
Required skills
- Proficiency in food preparation techniques, knife skills and mise en place.
- Knowledge of HACCP food safety regulations.
- Ability to operate and maintain kitchen equipment.
- Understanding of food cost management and waste reduction.
