Commis II - Restaurant

About the role

Rixos, a Rixos property in Ras Al Khaimah managed by Accor, is hiring a Commis II for its restaurant. The role covers food preparation, quality control and support to the kitchen team, including filling in for another chef when they are absent. It is a full-time permanent position.

Key responsibilities

• Prepare your own inventory list for your station and cover another chef when they are absent
• Follow standard recipes and plating guides at all times
• Provide the Executive Sous Chef with the daily market list, control goods received and supply recipes and costing
• Propose food promotions, events and other food-related activities to the Executive Sous Chef and Executive Chef
• Control food wastage without compromising quality and recommend improvements to systems and procedures
• Maintain records and documentation, keep good intradepartmental communication through log books and memoranda, and attend scheduled training
• Check buffets before customers arrive and during service, refill them and check food quality and labels
• Help guests understand dishes and recommend specialties and promotions, and check the quality of food leaving the kitchen
• Apply HACCP according to hotel standards, check equipment at the end of each shift and hand over information to the next shift
• Punctuality, proper grooming, compliance with hotel rules and cooperation with colleagues and customers

Required profile

• Diploma or degree in vocational hospitality
• 1-2 years of experience in a 4-5 star hotel
