Demi Chef de Partie - Banquets

About the role

Mandarin Oriental Downtown, Dubai, is looking for a Demi Chef de Partie to join its Banquets team. The role is based in the Banquets section and reports to the Chef de Partie. The Demi Chef de Partie contributes to delivering exceptional dishes that meet the hotel's world-class standards of taste, presentation and food safety.

Key responsibilities

• Assist the Chef de Partie in preparing and executing high-quality dishes and in mise en place.
• Ensure ingredients and recipes are followed precisely, maintaining consistency and excellence.
• Monitor stock and inventory levels in the section, ensuring timely requisitions and minimal waste.
• Collaborate with the team in developing new recipes.
• Support broader kitchen operations and cross-functional tasks as needed.
• Comply with health, food safety and hygiene standards in line with hotel policy and HACCP requirements, including those mandated by the UAE Municipality.

Required profile

• High school diploma or equivalent; formal culinary training is an advantage.
• At least 2 years' experience as Demi Chef de Partie in a main kitchen or hot kitchen of a 5-star hotel or high-end restaurant.
• Solid knowledge and hands-on experience in banquet and main kitchen work.
• Previous experience in hotel pre-opening or renovation projects is highly desirable.
• Creativity, passion for cooking and a team-oriented mindset.

Required skills

• Strong understanding of HACCP and food safety practices.
• Effective verbal and written English; knowledge of additional languages is a plus.
