Executive Sous Chef

About the role

Accor is looking for an Executive Sous Chef in Ras Al-Khaimah to join a team focused on culinary excellence and to lead high-performing kitchen and stewarding operations. The role supports the Executive Chef in running the kitchen and covers food costs, menus, HACCP compliance and team development.

Key responsibilities

• Support the Executive Chef in managing daily kitchen and stewarding operations.
• Monitor food costs, operating expenses, payroll and departmental budgets.
• Ensure menus are accurately costed and backed by standardized recipes and presentation guidelines.
• Maintain full compliance with HACCP standards and local health and safety regulations.
• Recruit, train, coach and develop kitchen and stewarding team members.
• Drive productivity, efficiency and service excellence.
• Collaborate with Food & Beverage Operations on seasonal promotions and menu developments.
• Oversee food quality, stock control, purchasing and storage.
• Lead departmental briefings, performance evaluations and training initiatives.
• Monitor guest feedback and implement continuous improvement.
• Keep kitchen equipment, workstations and storage areas to the highest standards.

Required profile

• Proven experience in a senior culinary leadership role, preferably as an Executive Sous Chef or Chef de Cuisine in a 5-star resort in the UAE / GCC.
• Strong operational experience in Banqueting and All-Day Dining, including high-volume operations, major events and peak periods.
• Excellent leadership, communication and team development skills.
