Head Chef - Japanese Cuisine

About the role

Daikan Hospitality Group operates a growing portfolio of Japanese-inspired restaurants across the UAE, from izakaya dining and handcrafted cocktails to fast-casual ramen concepts, and is expanding into the Middle East. It is looking for a Head Chef to lead its culinary team, with expertise in Japanese cuisine and experience leading high-volume restaurant operations.

Key responsibilities

• Direct and manage the kitchen staff, fostering teamwork and cooperation
• Design and innovate menus that reflect the restaurant's vision and culinary trends, keeping dishes fresh, seasonal and aligned with guest preferences
• Maintain high standards of food quality, presentation and consistency, and monitor food preparation for compliance with health and safety regulations
• Train and mentor kitchen staff on cooking techniques, food safety and kitchen management
• Oversee inventory levels, stock rotation and supplier relationships, and manage food costs
• Manage kitchen operations to ensure timely meals and service, optimising workflows to reduce waste
• Gather guest feedback and address concerns proactively
• Implement health and safety standards in the kitchen

Required profile

• Proven experience as a Head Chef or in a similar role in a high-volume kitchen
• Expert knowledge of Japanese cuisine and culinary techniques
• Culinary degree or equivalent certification preferred
• Ability to work flexible hours, including nights and weekends
