Junior Sous Chef – Bakery

About the role

Based at Mandarin Oriental Downtown, Dubai, within the Bakery Kitchen, the Junior Sous Chef assists in preparing and baking a wide range of products, maintains high standards of quality and consistency, and contributes to the creative development of new baked goods. The role reports to the Head Baker.

Key responsibilities

• Assist in preparing a range of baked goods, ensuring adherence to recipes and presentation standards.
• Support daily bakery operations, including inventory, ordering, and equipment maintenance.
• Collaborate on developing and testing new recipes and seasonal items.
• Maintain cleanliness and comply with hygiene and food safety regulations.
• Mentor junior staff and contribute to their skill development.
• Help manage production schedules and control food costs to optimize efficiency and reduce waste.

Required profile

• 5–7 years of experience in the culinary industry, focusing on baking and pastry.
• Familiarity with the Middle East market is preferred.
• Strong knowledge of baking techniques, dough handling, and pastry preparation.
• Highly organized and efficient, especially in fast‑paced kitchen environments.
• Creative, detail‑oriented, and passionate about the baking and pastry arts.
• Excellent communicator and team player, with flexibility for varied working hours.
