Junior Sous Chef - Italian Kitchen

About the role

The Ritz-Carlton is looking for a Junior Sous Chef for its Italian kitchen in Dubai. This is a full-time, non-management position based at the Al Mamsha Street location in Jumeirah Beach Residences. The role ensures that the hotel's Gold Standards of service are delivered in the kitchen, while supporting the chef and the team.

Key responsibilities

• Prepare and cook food according to recipes, quality standards, presentation standards and the food preparation checklist, including cold foods.
• Regulate oven, broiler, grill and roaster temperatures, and pull food from freezer storage to thaw in the refrigerator.
• Ensure proper portion, arrangement and garnish, and monitor the quality and quantity of food prepared.
• Maintain food logs and inform the chef of excess food items for daily specials.
• Tell food and beverage service staff about menu specials and out-of-stock items, and anticipate guests' service needs.
• Assist management with hiring, training, scheduling, evaluation, counselling, discipline and motivation, and act as a role model.
• Follow company, safety and security policies, report accidents and unsafe conditions, and complete required safety training.
• Keep a clean, professional appearance, protect confidential information and company assets, and speak clearly and professionally.
• Perform other reasonable duties requested by supervisors.

Required profile

• At least 3 years of related work experience.
• No supervisory experience required.
• Preferred: a technical, trade or vocational school degree.
• Physical ability to stand, sit or walk for long periods, reach overhead and below the knees, and lift up to 25 pounds without assistance.
