About the role

Kerzner International is recruiting a Pastry Commis I to join the Pastry team at One&Only The Palm Hotel in Dubai. The role goes beyond making pastries and desserts: it involves building good working relationships with colleagues and helping deliver an exceptional culinary experience for guests.

Key responsibilities

• Prepare and assist in baking pastries, desserts, breads and other items according to recipes and standards, keeping quality, taste and presentation consistent.
• Support the Pastry Chef de Partie and senior team in daily production, prepare mise-en-place and keep ingredients and equipment ready for service.
• Help with seasonal desserts, special promotions and menu items, and assist with banquets, events and high-volume operations.
• Monitor stock levels, inform supervisors of shortages, and help with inventory counts and stock-taking.
• Store, label and rotate ingredients correctly (FIFO), inspect them for freshness and keep the workstation clean and hygienic.
• Follow food safety regulations, HACCP standards and hygiene procedures.
• Clean, maintain kitchen equipment and report maintenance issues, and minimise wastage through portion control.
• Take part in training sessions, kitchen briefings and team meetings, and help other kitchen sections when needed.

Required profile

• 1-2 years of experience in a pastry kitchen, preferably in a luxury hotel, resort or restaurant.
• Basic knowledge of pastry and bakery preparation.
• Strong communication skills, a positive attitude and a passion for quality products.
• Proficiency in English is required; additional languages are an advantage.
