Restaurant General Manager – Premium Pan‑Asian Venue

About the role

Fundamental Hospitality seeks an experienced Restaurant General Manager to lead Shanghai Me, a premium Pan‑Asian dining concept located in DIFC, Dubai. The role oversees day‑to‑day operations, drives commercial performance and ensures an elevated guest experience.

Key responsibilities

• Take full ownership of venue operations, service standards, food quality and overall presentation.
• Lead, develop and motivate the management and operational teams, fostering a culture of accountability and teamwork.
• Manage the venue P&L, budgets, forecasting, labour costs and operational expenses.
• Analyse financial and operational data, implementing action plans to improve efficiency, revenue and profitability.
• Build strong relationships with VIP guests, regular clientele and external stakeholders.
• Oversee recruitment, onboarding, training, performance management and staff development in partnership with HR.
• Ensure compliance with licensing, health, safety and hygiene regulations.
• Collaborate with senior management on commercial initiatives, events, marketing and business development.
• Control purchasing, inventory, cost and supplier relationships to maintain operational efficiency.

Required profile

• Proven experience as a General Manager or senior operational leader in a high‑end restaurant or premium dining concept.
• Strong track record managing high‑volume operations and large, diverse teams.
• Commercial acumen with experience managing P&L, budgets, labour costs and overall financial performance.
• Excellent knowledge of premium dining operations, service standards and guest expectations.
• Leadership and people‑management skills with the ability to build high‑performing teams.
• Fluent English communication; additional languages are a plus.
• Understanding of current hospitality trends and the premium dining market.
• Prior experience in Dubai or the UAE is strongly preferred.
