Restaurant Manager – Italian Restaurant

About the role

Fairmont Bab Al Bahr, a five-star beachfront luxury hotel in Abu Dhabi, is looking for an Italian restaurant manager. The role oversees the daily operation of the Italian restaurant, maintains Fairmont luxury service standards and leads the team to deliver authentic Italian dining.

Key responsibilities

• Oversee daily operations, conduct daily briefings and monitor cleanliness, appearance and ambiance
• Ensure accurate opening and closing procedures and coordinate with the kitchen for timely, high-quality food service
• Supervise reservations, seating and guest flow, welcome guests, handle complaints and follow up feedback
• Recruit, train, coach and evaluate staff, prepare schedules and enforce grooming, hygiene and uniform standards
• Achieve revenue and profitability targets, monitor sales, control labour costs and manage operating expenses
• Collaborate with the Chef de Cuisine on menu planning and seasonal promotions, and support wine and beverage promotions
• Monitor inventory, stock ordering, breakage and waste, and conduct regular inventory counts
• Ensure HACCP, food safety, hygiene, sanitation, municipal regulations and hotel policy compliance, and report maintenance issues

Required profile

• Diploma or Bachelor's degree in Hospitality Management, Hotel Management, Business Administration or a related field
• Minimum 3-5 years of experience as a Restaurant Manager in a luxury hotel or fine-dining Italian restaurant
• Strong leadership, communication and interpersonal skills
• Fluent English; Italian is an advantage

Required skills

• Sound knowledge of Italian cuisine, wines and restaurant operations
• Knowledge of HACCP and food safety regulations
• Proficiency in Microsoft Office and restaurant POS systems
• Strong financial and analytical skills
