Restaurant Manager - Luxury/Premium Dining

About the role

Momofuku Abu Dhabi, part of the Momofuku group founded by David Chang and owned by Chinese Palace Group, is looking for an experienced Restaurant Manager to join the opening team. The manager will help establish and run the restaurant to a high international standard, working alongside the General Manager before and during the launch.

Key responsibilities

• Pre-opening: support the General Manager in setting up operating procedures, service standards, checklists and workflows, and prepare front-of-house operations, reservations, POS and guest flow for mock services, tastings, soft openings and the official launch.
• Daily operations: oversee service, monitor flow, table management and reservations, hold daily briefings, stay visible on the floor and keep food quality, cleanliness and brand standards high.
• Guest experience: deliver a memorable Momofuku experience, handle guest feedback and complaints, and look after VIPs and special occasions.
• Team leadership: recruit, train and coach the front-of-house team, manage schedules and deploy staff according to peak and off-peak needs.
• Sales and commercial performance: drive revenue through upselling and menu knowledge, work with Marketing on promotions and events, and monitor costs.
• Inventory and cost control: monitor front-of-house stock and supplies, support regular counts and work with Purchasing, Finance, Bar and Kitchen.
• Training and compliance: run service training, observe service and ensure compliance with UAE regulations, food safety and health and safety standards.

Required profile

• Diploma or Bachelor's degree in F&B management, hospitality management, business administration or a related field preferred.
• Minimum 5-7 years of F&B experience, with at least 2-3 years in a Restaurant Manager or equivalent leadership position.
• Strong experience in premium, upscale or luxury dining; previous pre-opening experience highly desirable.
• Experience with a high-volume or internationally branded restaurant is an advantage; UAE or GCC F&B experience preferred.
