Sous Chef - Em Sherif Sea Café

About the role

Em Sherif Sea Café in Dubai is looking for a Sous Chef for its Preparation kitchen. The role covers all preparation kitchen functions, controls costs and ensures food and beverage quality, hygiene and safety in a fast-paced environment. It is a full-time position.

Key responsibilities

• Manage daily preparation kitchen operations within the set budget and procedures, and report BOH maintenance issues to the Head Chef
• Prepare daily action plans, delegate tasks and ensure standard recipes are followed
• Fill and issue daily preparation sheets based on the Service kitchen's requisitions, and plan quantities for each shift
• Control wastage, inventory and requisition orders, and instruct the stewarding team on cleaning and hygiene
• Store fresh and dry products according to FIFO, in labelled containers at the right temperature, and implement HACCP and other safety controls
• Keep up to date with menus and communicate changes to the team daily
• Conduct regular stock checks, prepare requisition orders, supervise receiving and send goods to the service kitchen
• Help in any part of the preparation kitchen or back-of-house when needed

Required profile

• Minimum 4 years as a Head Chef or 5 years as a Sous Chef in a Lebanese/Oriental restaurant
• Bachelor's degree in hospitality management, business management or equivalent experience with proven management ability
• Excellent command of English and Arabic, spoken and written
• Knowledge of finance and accounting, food sanitation and hygiene, HACCP, and fire, health and safety procedures
