Sous Chef - French Cuisine

About the role

FIVE Hotels and Resorts is hiring a Sous Chef for its French cuisine kitchen in Dubai. The role sits within a global lifestyle group spanning hospitality, entertainment, real estate and more, and involves overseeing daily kitchen operations, mentoring the kitchen team and supporting the Chef de Cuisine.

Key responsibilities

• Oversee daily kitchen operations, from food preparation to plating, and curate menus with seasonal, locally sourced ingredients
• Lead, train and mentor the kitchen team, giving guidance on techniques, time management and kitchen safety
• Manage inventory levels, control costs and minimise waste with the Chef de Cuisine and procurement team
• Enforce food safety and hygiene regulations, inspect the kitchen regularly and take corrective action
• Support the Chef de Cuisine with administrative tasks such as scheduling performance evaluations and reporting
• Work with front-of-house staff and servers to ensure a seamless dining experience and address guest requests and dietary needs

Required profile

• A proven track record as a Sous Chef in a luxury hotel or fine dining restaurant
• Culinary degree or equivalent qualification preferred; pre-opening kitchen experience is an advantage
• Previous experience in Forbes or LQA-rated properties is advantageous
• Fluent English; additional languages such as Arabic, German, Italian, French, Spanish, Russian or Mandarin are a plus
• Willingness to work various shifts, including weekends and holidays

Required skills

• Extensive knowledge of international cuisine, culinary techniques and food trends
• HACCP principles, health and safety regulations, food hygiene standards and best restaurant practices
• Inventory management, cost control and menu development
