Specialty Chef

About the role

A full-time, non-management Specialty Chef position is available at a Marriott Luxury Collection property in Dubai. The chef prepares ingredients and cooks food according to recipes, quality standards and presentation standards, and works closely with the team during busy periods.

Key responsibilities

• Prepare ingredients for cooking, including portioning, chopping and storing food, and thaw frozen items in the refrigerator
• Weigh, measure and mix ingredients according to recipes or personal judgment
• Prepare and cook food according to recipes, quality standards, presentation standards and a food preparation checklist
• Monitor food quality, test foods for doneness by tasting, smelling or piercing, and ensure proper portion, arrangement and garnish
• Serve food in proper portions onto the correct receptacle and use kitchen tools safely
• Wash and disinfect the kitchen area, tables, tools, knives and equipment, and check appliance and food temperatures
• Notify the manager of products that do not meet specifications and ask for help during busy periods
• Follow company safety and security policies, report accidents and unsafe conditions, complete safety training and certifications, and maintain a clean, professional appearance
• Welcome guests according to company standards and support the team to reach common goals

Required profile

• High school diploma or G.E.D. equivalent
• At least 1 year of related work experience
• No supervisory experience required
• Ability to stand, sit or walk for long periods and to lift objects up to 10 pounds
