Butcher Chef – Luxury Hotel Kitchen

About the role

Rixos The Palm Dubai is seeking an experienced Butcher Chef to lead its butcher shop operations within the hotel’s culinary team. The successful candidate will ensure high‑quality meat preparation, uphold strict safety standards, and support the overall dining experience for guests.

Key responsibilities

• Manage daily butcher shop operations and meat preparation.
• Accurately cut, portion, and prepare beef, lamb, poultry and other meats.
• Maintain food safety, hygiene and HACCP procedures.
• Control product quality, yield and minimise wastage.
• Oversee proper storage, labeling and rotation of all meat products.
• Collaborate with the Executive Chef and culinary management to meet operational needs.
• Train and supervise junior butchery team members.
• Keep the work area clean, organized and professional.

Required profile

• Minimum 2 years experience as a Butcher Chef or Butcher Supervisor in a luxury hotel, resort or high‑volume culinary operation.
• Strong knowledge of meat cuts, portion control and butchery techniques.
• Excellent understanding of food safety and hygiene standards.
• Good leadership and communication abilities.
• Ability to work under pressure in a fast‑paced environment.
• Experience in an international luxury hospitality setting is highly preferred.
