Commis 1 – Cold Kitchen

About the role

The Commis 1 – Cold Kitchen supports the culinary team at Ajman Saray, a Luxury Collection Resort, by preparing high‑quality cold dishes and ensuring smooth kitchen operations. This full‑time position is ideal for an experienced kitchen professional who thrives in a fast‑paced hospitality environment.

Key responsibilities

• Prepare special meals or substitute items, ensuring proper portion, arrangement, and garnish.
• Regulate temperature of ovens, broilers, grills, and roasters.
• Pull food from freezer storage and thaw it in the refrigerator.
• Prepare and cook cold foods according to recipes, quality, and presentation standards.
• Maintain food logs and monitor the quality and quantity of prepared food.
• Communicate assistance needs during busy periods and inform the Chef of excess items for daily specials.
• Notify Food & Beverage service staff of menu specials and out‑of‑stock items.
• Follow all safety, security, and hygiene policies; report maintenance needs, accidents, and unsafe conditions.
• Uphold uniform and personal appearance standards and protect company assets.
• Perform physical tasks such as standing, walking, lifting objects up to 25 lb, and reaching overhead.

Required profile

• Technical, trade or vocational school degree.
• At least 3 years of related cold‑kitchen experience.
• No supervisory experience required.
• No specific license or certification required.

Required skills

• Operating ovens, broilers, grills and roasters.
• Food preparation and cold‑kitchen cooking techniques.
• Maintaining food logs and inventory tracking.
