Commis I – Prime 52

About the role

Marriott International is seeking a motivated Commis I for its Prime 52 operation at the Dubai Marriott Harbour Hotel & Suites. The role involves preparing special meals, maintaining food quality, and supporting the kitchen team in a fast‑paced, guest‑focused environment.

Key responsibilities

• Prepare special meals and substitute items according to recipes and presentation standards.
• Regulate oven, broiler, grill and roaster temperatures and manage food thawing from freezer to refrigerator.
• Ensure proper portioning, arrangement, and garnish; maintain accurate food logs.
• Monitor food quality and quantity, communicate assistance needs during busy periods, and inform chefs of excess items for daily specials.
• Notify service staff of menu specials and out‑of‑stock items.
• Assist management with hiring, training, scheduling, evaluating and coaching team members.
• Follow all company, safety and security policies; report maintenance issues, accidents and unsafe conditions.

Required profile

• Technical, trade or vocational school qualification.
• Minimum three (3) years of relevant food‑and‑beverage experience.
• No prior supervisory experience required.
• Ability to work extended periods standing, walking, bending and lifting up to 25 lb.
