Junior Sous Chef – Bakery

About the role

Based in the Mandarin Oriental Downtown, Dubai, the Junior Sous Chef will support the Bakery Kitchen by preparing and baking a wide range of products, maintaining high quality and consistency, and helping to develop new baked creations. You will report directly to the Head Baker and work closely with the culinary team.

Key responsibilities

• Assist in preparing a variety of baked goods, following recipes and presentation standards.
• Support daily bakery operations, including inventory control, ordering, and equipment maintenance.
• Collaborate on developing and testing new recipes and seasonal items.
• Maintain cleanliness and ensure compliance with hygiene and food‑safety regulations.
• Mentor junior staff and contribute to their skill development.
• Help manage production schedules and control food costs to optimise efficiency and reduce waste.

Required profile

• 5–7 years of experience in the culinary industry with a focus on baking and pastry.
• Familiarity with the Middle East market is preferred.
• Strong knowledge of baking techniques, dough handling and pastry preparation.
• Highly organised and efficient in fast‑paced kitchen environments.
• Creative, detail‑oriented and passionate about the baking and pastry arts.
• Excellent communicator, team player and flexible with working hours.
