Restaurant Manager – Luxury F&B Venues

About the role

The Restaurant Manager will lead day‑to‑day operations of Peacock Alley, the Cigar Lounge and Waqud Café, ensuring exceptional food, beverage and service experiences for guests of a Forbes Five‑Star property.

Key responsibilities

• Achieve commercial targets by managing budgets, forecasts, payroll, operating expenses and inventory while driving revenue through seating strategies, upselling and special events.
• Partner with culinary and beverage teams to develop innovative menus, drink and cigar offerings that meet luxury standards and enhance profitability.
• Lead a high‑performing team, overseeing recruitment, training, performance management and scheduling to maintain service excellence.
• Ensure compliance with health, safety, food safety, licensing and brand standards through regular audits and inspections.

Required profile

• Proven leadership experience in luxury food & beverage venues, including restaurants, lounges or premium cafés.
• Strong commercial focus with a track record of achieving revenue growth and cost control.
• Excellent communication and relationship‑building skills for interacting with guests, VIPs and internal stakeholders.

Required skills

• In‑depth beverage knowledge covering tea, coffee, cocktails and premium spirits.
• Expertise in premium cigar products and market trends.
• Financial management skills including budgeting, forecasting and inventory control.
• Understanding of luxury service standards such as Forbes Five‑Star and Waldorf Astoria guidelines.
