About the role

The Anantara The Palm Dubai Resort is seeking a Specialty Chef to lead the creation and delivery of authentic and contemporary Asian cuisine. This full‑time position will ensure exceptional guest experiences while upholding the highest culinary standards within a dynamic hotel environment.

Key responsibilities

• Lead the preparation, presentation, and innovation of Asian dishes, maintaining quality and consistency.
• Organise all kitchen activities, ensuring safe, smooth, and profitable operations.
• Develop and maintain Asian cuisine concepts, menus, and presentation standards.
• Monitor local market trends and adjust menus according to seasonal product availability.
• Research and introduce new Asian culinary trends, ingredients, and techniques.
• Source authentic Asian ingredients while meeting food‑cost targets.
• Create seasonal menus and special promotions inspired by Asian traditions.
• Train and mentor kitchen staff in Asian cooking techniques and plating standards.
• Conduct regular tasting sessions to ensure quality and consistency.
• Collaborate with the Executive Chef on menu engineering and concept development.
• Adhere to Anantara food preparation and presentation guidelines.
• Recommend improvements to presentation guidelines and maintain food safety and sanitation practices.
