Assistant Manager, Food & Beverage

About the role

Atlantis The Royal, a luxury resort on the Palm Island, is looking for an Assistant Manager to support the restaurant management in maintaining the highest standards of quality across the F&B operation. The role engages and motivates colleagues through training, coaching and strong communication, and helps oversee department profitability while taking part in auditing, stock control and recruitment.

Key responsibilities

• Drive departmental KPIs covering Guest (IFH, Forbes, Helix, social media), People (CES, turnover, training hours), Product (health and safety, ISO audits, innovation) and Profit (revenue, cost of sales, payroll, expenses, net contribution).
• Analyse each shift's staff performance and service standards, then implement improvements.
• Manage inventory and ordering of restaurant tools and equipment, and ensure opening and closing checklists are followed.
• In the restaurant manager's absence, attend the F&B daily operations meeting and brief the team.
• Help schedule the outlet to maximise efficiency and minimise split shifts and overtime.
• Monitor food and beverage quality, escalate major issues or complaints, and record guest preferences in the 7Rooms reservation system with accurate tags.
• Ensure proper portioning, attractive plating and service standards, and review customer feedback on food, service and satisfaction.
• Maximise reservations in liaison with Reception and the Restaurant Reservations team.

Required profile

• At least 3 years of experience in a supervisory or junior management capacity.
• Solid background in high-end dining, in a luxury hotel or a renowned restaurant group.
• Commitment to the F&B industry and effective communication with all levels of the organisation.
• International experience and knowledge of additional languages are highly preferred.
