Chef de Partie - Culinary Department

About the role

Mandarin Oriental Downtown, Dubai, based in the culinary department, is looking for a Chef de Partie to help deliver exceptional craftsmanship that meets its world-class standards of taste, presentation and food safety. The hotel sits in Wasl Tower on Sheikh Zayed Road and has a growing dining portfolio.

Key responsibilities

• Follow all ingredients and recipes precisely to maintain consistency and excellence.
• Manage daily ordering of ingredients to keep kitchen operations smooth and inventory controlled.
• Monitor stock and inventory levels in your section, make timely requisitions and minimise waste.
• Collaborate with the team on developing new recipes.
• Support broader kitchen operations and cross-functional tasks as needed.
• Comply with health, food safety and hygiene standards, including HACCP requirements and those mandated by the UAE Municipality.

Required profile

• High school diploma or equivalent; formal culinary training is an advantage.
• At least 2 years' experience in a 5-star hotel or high-end restaurant.
• International exposure in at least two regions (Asia, Europe, North America, preferably the Middle East) is advantageous.
• Effective verbal and written English; knowledge of other languages is a plus.

Required skills

• Strong culinary skills with solid knowledge of dish preparation, cooking techniques and presentation.
• Strong understanding of HACCP and food safety practices.
