About the role
The Chef de Partie will prepare special meals, substitute items, and cold foods while ensuring all dishes meet Marriott’s quality, presentation, and safety standards. This role involves managing kitchen equipment temperatures, maintaining food logs, and supporting the Chef during busy periods.
Key responsibilities
- Prepare and cook food according to recipes, quality and presentation standards, and the food preparation checklist.
- Regulate temperature of ovens, broilers, grills, and roasters; pull items from freezer storage to thaw safely.
- Maintain accurate food logs, monitor portion sizes, and ensure proper garnish and arrangement.
- Communicate assistance needs during peak times and inform the Chef of excess items for daily specials.
- Follow all safety, security, and uniform policies; report maintenance needs, accidents, and unsafe conditions.
Required profile
- Technical, trade, or vocational school degree.
- Minimum of 3 years related culinary experience.
- No prior supervisory experience required.
- No specific license or certification required.
