Chef De Partie - Main Kitchen

About the role

La Suite Dubai Hotel & Apartment, part of NH Collection Hotels & Resorts, is looking for a Chef de Partie for its main kitchen. The post manages a designated section of the kitchen, ensuring high-quality food is prepared, cooked and presented in line with company standards, recipes and hygiene regulations. It reports to the Head Chef.

Key responsibilities

• Prepare, cook and present menu items according to approved recipes and quality standards, and manage the assigned kitchen section during service
• Monitor food quality, taste, texture and presentation before service, and assist with menu development, recipe standardization and seasonal promotions
• Organize daily mise en place, coordinate with other kitchen sections and minimize food wastage through portion control
• Store, label and rotate food using FIFO principles and keep the work area clean and organized
• Supervise, train and guide Commis Chefs and Kitchen Helpers, delegate tasks and support their onboarding
• Ensure compliance with food safety, HACCP, municipality regulations and company policies, and report equipment faults and safety hazards
• Assist with stock control, inventory checks, ordering and monthly stock counts, and help maintain food cost targets

Required profile

• Diploma or certificate in Culinary Arts, Hospitality or a related field preferred
• Minimum 2-4 years of experience in a similar role in a hotel, restaurant or catering operation
• Strong knowledge of international food preparation and cooking techniques
• Familiarity with HACCP and food safety regulations
• Previous experience supervising junior kitchen staff is an advantage
